This is one of my main dinner go to’s because it is so simple and makes very few dishes 😉


 

STEP 1: Turn oven to 425 F. I usually give the chicken a quick rinse and stuff it with an onion, apple or orange or lime cut in half to help keep the chicken moist when cooking. I place everything in a roasting pan that is covered.

STEP 2: The roasted veggies are next. My strategy is layering them in the roasting pan, smallest on the bottom and largest veggies layered on top. I usually use a full bulb of peeled garlic, onions, carrots, yams or potatoes (sometimes both), and beets.

STEP 3: Next is time for the seasonings. I usually put some avocado oil on the veggies and will put some butter on the chicken (just like my Grandma did!). For seasonings I use, salt, pepper, garlic and herb blend, and mushroom blend seasoning.

STEP 4: Place in the oven for approx. 1.5 hours. Each chicken is a bit different in terms of timing, just make sure the internal temperature is warmer than 165 F.

STEP 5: Enjoy the meal and the few dishes involved.
