Dairy Free Eggplant Lasagna
I made this recipe about a week ago for a couple friends whom are doing the Whole30 this month, and it was a hit! I even got a comment about it having more flavor than traditional lasagna.

Here is my recipe for Eggplant Lasagna:

STEP 1: The Sauce
≜ This step can be very individual. I’m sure so many of us have a go to spaghetti sauce filled with all our favorites. The vegan’s may hold off on the hamburger and add lentils, cauliflower, or mushrooms.
≜ I browned 1 package of hamburger
≜ sauté’ some onion and garlic (3-4 cloves)
≜ Add a jar of organic tomato sauce
≜ Put in the seasonings; sea salt, pepper, an Italian blend that included crushed red pepper, minced garlic, basil, thyme, smoked paprika and oregano

STEP 2: The Spinach
≜ Take the frozen spinach out of the freezer and allow to thaw. This may take an hour plus!
≜ Drain the excess liquid out of the spinach
≜ Break the spinach apart and add a bit of nutmeg to it for flavor

STEP 3: The Eggplant
≜ Warm the oven to 375 ℉
≜ Wash and slice 2 eggplants into lasagna noodle thickness (1/4 of an inch). (I ended up with extra noodles but some of the ones cut thinly weren’t ideal for the layers)
≜ Place your favorite cooking oil on a cookie sheet (I use avocado)
≜ Place the eggplant noodles on the cookie sheet and season with sea salt
≜ Cook the noodles for 5 minutes then flip them, and cook for another 5 minutes

STEP 4: The Almond Ricotta.
≜ Add the following to a blender or to Vitamix
≜2.5 cups of slivered almonds, 1/4-1/2 cup of nutritional yeast, 2 Tbsp of lemon juice,1/2-1 tsp of sea salt, 1/2 tsp of garlic powder
≜ Add 1 cup of water at first then add more if needed to get a creamy consistency
.
STEP 5: Layering
≜ Start with a sauce layer in the pan
≜ Add a layer of eggplant noodles
≜ Next layer on the Almond Ricotta
≜ And finally add the spinach
≜ Layer until you fill your dish and finishing with a Ricotta layer on top
.
STEP 6: Cooking
≜Cook uncovered in the oven at 350℉ for 30 minutes
≜ Then place oven setting to low broil for about 5-10 minutes to brown the top
.
≜ Garnish with fresh basil and enjoy!
