Coconut Turmeric Cod
Step 1: Cook Rice. Add 3/4 cup of Jasmine Rice with 1 1/2 cups of salted water. Reduce to low heat once boiling. Cooked covered for 15-18 minutes
Step 2: Roast Veggies. Heat oven to 425 F. Chop 1 shallot, 2 carrots,1/2 cauliflower, 1 Fennel.Cover cookie sheet with parchment paper. Add veggies, coat in Avocado Oil and salt and Pepper. Roast for 14-16 minutes.
Step 3: Make Turmeric Sauce. Use a cast oil skillet (preferred). Add 1 can of coconut milk, 2tsp of Sesame Oil, 1 tsp Turmeric, 1/2 tsp of fresh/ground ginger, 1/4 tsp onion powder, 1/4 roasted garlic powder/fresh, 2 Tbsp of Fish Sauce, 1 Tbsp of Sambal Oelek (for spice). Cook over medium/low for 8 minutes.
Step 4: Cook Fish. After 8 minutes has past, add 2 pieces of rinsed/dried Cod to sauce. Cook on each side for 3-4 minutes until fish looks flaky.Once cooked add roasted veggies.
Step 5: Plate, Garnish & Enjoy. Garnish with fresh chopped mint or Thai basil and fresh lime juice.
